HOMEMADE


I was in the mood for making/baking in the kitchen this weekend, so whipped up some hummus in preparation for the weeks lunches, chewy oat bites for Miss M and experimented with a chocolate millet slice, inspired by this recipe.

The chocolate millet slice needs a bit of developing, but the hummus and oat bites are good to go. I don't follow a recipe when making hummus. I simply throw chickpeas, garlic, tahini, parsley and lemon juice into a blender and adjust the flavours as I go.

The recipe for the oat bites is below. As this uses no refined sugar it's a great morning tea treat for the family.


CHEWY OAT BITES

1 1/2 C rolled oats
1/2 C wholemeal spelt flour
1/4 C shredded coconut
1 tbsp chia seeds
1/4 tsp cinnamon
1 apple, peeled and grated
1/2 C blueberries (fresh or frozen)
1 overripe banana, mased
1 egg
1 1/4 C milk

Preheat oven to 180 degrees celcius. Grease & line a 26x18cm baking tray.

In a large bowl combine dry ingredients, grated apple and blueberries. In a separate bowl mix together the mashed banana, egg and milk.

Make a well in the centre of the dry ingredients, and add wet mixture. Stir to combine. 

Pour mixture into prepared baking tray. Bake for 45 minutes. Allow to cool on a wire rack, then slice into small squares.
