pancake sunday


We have started a tradition in our house - PANCAKE SUNDAY! I think it is great for families to have their own special tradition, and as my husband and I both love food we figured that this would be perfect for our little family.

We usually make coconut pancakes, but when we have a house full of guests we revert to a quick and easy recipe.

COCONUT PANCAKES

400mls coconut milk (or 200mls normal milk)
1 C wholemeal spelt flour
1 C shredded unsweetened coconut
2 tspns baking powder
1/2 tspn fine sea salt
2 eggs lightly whisked

Whisk together the coconut milk & eggs until well combined. Combine flour, coconut, baking powder & salt in a bowl. Add milk mixture and mix until just combined.

Over medium heat, pour a ladle of batter into pan. Once bubbles start forming, and begin to burst, flip. Serve with berries, banana and a drizzle of rice malt syrup.

Serves 2 - 3

QUICK & EASY PANCAKES

1 C milk
1 C plain flour
1 tblspn sugar
1 tspn baking powder
1 egg

Whisk together milk & egg until well combine. Combine remaining ingredients in a bowl. Add milk mixture and mix until just combined.

Over medium heat, pour a ladle of batter into pan. Once bubbles start forming, and begin to burst, flip. Serve with berries, banana and a drizzle of rice malt syrup.

Serves 2
