I had a hankering for potato chips the other day, so whipped out a few spuds and a mandolin and made a batch of oven baked chips - so easy, and a lot healthier for you too!
HOMEMADE POTATO & KUMARA CHIPS
1 x All-purpose potato
1 x Kumara
1 Tblspn melted Coconut Oil
Himilayan Rock salt
Preheat oven to 180C. Using a mandolin, thinly slice the Potato & Kumara into rounds. Pat slices dry with a clean paper towel or dish cloth, and toss in a bowl with a drizzle of the coconut oil & rock salt until well coated.
Place a single layer on an oven tray and bake in oven until they start to colour. Watch them closely as they can burn! Reduce oven temperature, and bake until crispy. Some may be ready before others.
Let cool, and enjoy!
